Gamberi Sfumati al Vino Bianco e Limone - White wine and lemon sautéed king prawns


Super simple, utterly delicious and bursting with fresh summer flavours – this seafood dish from my hometown brings the Italian seaside straight to your plate.


Succulent king prawns sautéed in garlic, olive oil, white wine and lemon... a true flavour explosion!


The secret? Fresh shellfish and careful cooking – don’t overdo it!



Ingredients (serves 4)

  • 600g fresh king prawns, cleaned

  • 2 garlic cloves, bashed

  • Juice of 1 lemon

  • 1 glass of dry white wine

  • Extra virgin olive oil

  • A small handful of fresh parsley, finely chopped

  • Fresh chilli (optional)

  • Salt & pepper for seasoning



Method

  1. In a large frying pan, heat a generous amount of extra virgin olive oil over medium heat.

  2. Add the bashed garlic cloves and gently sauté for a few minutes until fragrant and lightly golden.

  3. Add the prawns to the pan in a single layer. As they begin to sizzle and turn pink, give them a shake.

  4. Pour in the white wine, increase the heat to burn off the alcohol, and let them sizzle for 1–2 minutes.

  5. Turn the prawns to cook the other side for another minute or so, being careful not to overcook.

  6. Add the lemon juice, a few halved cherry tomatoes (optional), chopped fresh parsley, and season to taste with salt, pepper, and a little fresh chilli if using.

  7. Serve immediately with warm crusty bread or garlic bruschetta to soak up the delicious juices and make the perfect scarpetta! Pair with a chilled glass of white wine and enjoy a true taste of Italian summer. Buon Appetito!
